NŪTRIŌ believes in creating nourishing, balanced meals to meet to each guest’s needs and goals during their stay. Dietary requirements are catered for, including keto, vegan, gluten, and dairy-free. The menu has been carefully designed to offer a selection of healthy gourmet recipes made with seasonal ingredients and adapted to each guest’s diet and nutritional needs. The information provided in the menu helps guests choose the dish that best fits their health goals and concerns, such as blood pressure, immunity, slimming, digestive, or good sleep.
The focus is on high-protein dishes balanced by a healthy fats, which are also low-carb and gluten-free – all with a Balinese twist, of course. For example, the Gado Gado – a traditional Indonesian salad – offers a variety of vegetables doused in peanut sauce, all of which which are excellent sources of antioxidants, dietary protein, and energy.

WELLNESS FOOD
Executive chef, Joshua Purwo Caroko, who has been with REVĪVŌ since its opening, heads and oversees the kitchens at NŪTRIŌ. Having trained under healthy chef guru Aliwalu in her Vital Kitchen concept, Joshua leads the kitchen harmoniously and pours care and love to the creation of every dish. Storing and cooking methods are designed to retain as many nutrients as possible. The main focus is to ensure that every recipe contains ingredients that invigorate, nourish, and health gut – hence the use of signature probiotic dressings and the presence of fermented food in almost every dish.
For example, the tempeh in the Pincho Tempeh Satay is created from non-GMO soya seeds and produced in a traditional method by a Japanese fermentation Master in Bali. One of the appetizers, the Symbiotic Trio – which contains red beetroot sauerkraut, yellow turmeric sauerkraut, and green spinach sauerkraut – offers a combination of probiotics and prebiotics for optimal gut health. As a wellness food specialist, Joshua ensures every recipe and ingredient helps each guest to feel invigorated, nourished, and happy. He loves to play with the healing power of herbs, flowers, and nature’s natural products as well as the diversity of tastes and colours.

Each menu item delivers nutrients to help nourish the body with exactly what it needs – vitamins, minerals, enzymes, and antioxidants. There are no additives, preservatives, or refined or processed ingredients in any of the dishes. NŪTRIŌ also strives to be organic where possible and choses ingredients that are organically harvested and beyond the requirements for organic certification, and also only works with seasonal and local produce. All sauces, vinaigrettes, oils, jams, and molasses are homemade onsite with fresh ingredients.
The restaurants also offers raw and vegan options, as well as a wide selection of handmade delicious raw desserts, and refreshing smoothies with tasty and healthy ingredients. Raw Pesto Pasta, one of the vegan main courses, contains ingredients such as raw zucchini, local pesto, fresh cherry tomatoes, and vegan mayonnaise.

MINDFULLY SOURCED
Using the finest organic ingredients, NŪTRIŌ’s farm-to-table concept serves fresh herbs, vegetables, and fruits produced in REVĪVŌ’s own permaculture garden, while also supporting local farmers, sustainable agriculture, and environmentally-friendly products. The resort supports, where possible, local farmers and artisans who produce in small quantities, in line with their mission to be more sustainable. Suppliers strive to create high-quality, unprocessed foods that are free of chemicals.
Dry goods come from organic and healthy food store Satvika Bhoga, created by Hira and Deepak, an Indonesian couple with Indian roots. They source only the finest ingredients and ensure farmers are fairly paid for their produce. Bread and pastry supplier “The Sweet Escapes” specializes in providing gluten-free and vegan product— including cakes, sweets, and pastries—while REVĪVŌ’s beef supplier produces high-quality beef, including 100% grass-fed Angus that’s high in omega-3s. Chicken is sourced from Singraja and Karangasem, local farmers from Ubud, who breed free-range chicken that produce a firm and lean meat.
